Lemon fondant

Have you ever heard about the cards game Burraco (in Italian)/ Buraco (in English)? It is a very nice game that seems to be simple in ìts goal but quite strategic. It requires 2 french cards games (2*52 cards and the jokers) and two teams (2 persons each). Each person has 11 cards in his hands and with his/her partner has to lay down 3 cards minimum of a sequence (always same color) or ranks. You can compare it a little to the solitaire. Each turn you have to pick up a card from the base or cards from the « trash ». The winner is the first one that get rid of his cards with at least one « mazzetto » on the table which means 7 cards from the same sequence or rank (see more details). Why am I telling you that??!! because we (A., me and 2 other friends) keep playing that since weeks until sometimes 2-3 in the morning. We usually enjoy a dinner all together and then we start to play. On one of these now usual occasions, we had after a dinner with good seafood (thanks G.!) a « fondant au citron » (with the lemons from my tree that we put on the terrace). My friend G. usually never eats dessert (except mine, I am doing some little advertising for myself ;-)) and doesn’t like fruit at all (specially melon). Anyway given that he might have reserved himself 2-3 times without saying any words between mouthful, I guessed that he appreciate it. So here the recipe alos for my friend K.

Unfortunately the picture is not the best I did, but I was so in rush between preparing the dinner and the one of Giacomo that was desperately hungry. The only moment I found time to do them was around sunset with no flash.

Lemon fondant

for the dough

  • 125 g salted butter
  • 75 g sugar
  • 160 g flour

for the fudge

  • 4 eggs
  • 310 g sugar
  • 110 ml FRESH lemon juice (2 lemons)
  • 1 lemon zest
  1. Warm up the oven at 180°C
  2. Mix the butter with the sugar to get a cream
  3. Add the flour and mix
  4. Spread the dough in a rectangular stamp covered with baking paper
  5. Place it in the oven for 20 minutes
  6. Take out from the oven and let the dough cool down
  7. Meanwhile prepare the fudge. Mix the sugar with the eggs until it gets bubbly
  8. Add the lemon juice and zest. Mix
  9. Pour on the cold dough and place in the oven for 20-25 minutes.
  10. Let it cool down before serving

Fondant au citron

pour la pate

  • 125 g de beurre demi sel
  • 75 g de sucre
  • 160 g de farine

pour le fondant

  • 4 oeufs
  • 310 g de sucre
  • 110 ml de jus de citron frais (environ 2 citrons)
  • le zeste d’un citron
  1. Préchauffer le four à 180°C
  2. Battre le beurre et le sucre en pommade
  3. Ajouter la farine et mélanger
  4. Etaler la pate sur un plat rectangulaire recouvert de papier sulfurisé
  5. Mettre au four pour 20 minutes
  6. Laisser refroidir à la sortie du four
  7. En attendant préparer le fondant: au batteur mélanger ensemble le sucre et les oeufs pour obtenir un mélange mousseux
  8. Ajouter le jus de citron et le zeste. Mélanger
  9. Verser dans le plat et enfourner pour 20-25 minutes
  10. Laisser refroidir avant de servir

Fondant al limone

per la pasta

  • 125 g burro salato
  • 75 g zucchero
  • 160 g farina

per il fondant

  • 4 uova
  • 310 g zucchero
  • 110 ml spremuta di limone
  • 1  buccia di limone
  1. Accendere il forno a 180°C
  2. Mischiare insieme il burro a lo zucchero in una pomata
  3. Aggiungere la farina e mischiare
  4. Stendere la pasta in uno stampo rectangolare coperto di carta di forno
  5. Infornare per circa 20 minuti
  6. Lasciare raffreddare la pasta
  7. Preparare il fondant tra questo tempo: mescolare lo zucchero e le uova fino a quando il misto sia spumante
  8. Aggiungere la spremuta di limone e la buccia. Mescolare
  9. Versare sopra la pasta e infornare per 20-25 minuti
  10. Lasciare raffreddare prima di servire

Sono proprio felice di averlo fatto perchè qui ho scoperto un universo proprio interessante! Adoro i dolci al limone e questa ricetta del fondente te la copierò sicuramente.
    Nel mio blog mi hai chiesto dove ho trovato farina di carrube e quinoa a roma si trovano in tutti i supermercati « natura si » ce ne sono tanti in tutta la città devi solo andare sul loro sito e cercare quello che è più vicino a casa tua.
